How to Age Awamori for Kusu
An Awamori aged three or more years after distilling can be called Kusu. Since ancient times, the Shitsugi distillation process has been used to mature Awamori to make Kusu. Shitsugi is the practice of periodically decanting and transferring through a sequence of urns, beginning with the oldest one (see inset), so the unique and particular flavor and aroma can be preserved during the long aging process.
